Princess Sofia Cake and Cupcakes | Simple and Easy

It's been 6 months since I uploaded a video on my YouTube channel. I have been busy with my job, as I am also working online. 

I had a few saved videos recorded. Some are new recipes, and some are cake decorating, but unfortunately, the laptop's hard drive crashed. Sad they are gone. When I started the new job, I never could record some of my work, and I slowly began not receiving orders anymore. 

But one of my customers booked a set of cakes and cupcakes for December 26th. I took this chance to record this.

No extraordinary work for this. Just a simple design made of chocolate cake and boiled icing. Toppers are printed on glossy photo paper, and Sofia is the typical figurine I had a few months ago.




This is a 7x4 inch chocomoist cake with 2 dozen 2 oz chocomoist cupcakes.

Snake Plant Cake for Plantita and Plantito

Dahil nauso ng husto ngayong pandemic ang pag-aalaga ng halaman, nauso rin ang cake na may themed na halaman o mga bulaklak. 

Nakagawa na rin ako ng ilang cake na may themed na "plantita." 



Snake Plants, bagama't noon pa man uso na rin dahil it is also categorized as one of the common household plants. It purifies air daw and eliminate odors. Kaya naman hindi kataka-taka na gawin din itong cake.

For those who are in least budget, mabigyan lang ng cake ang isang celebrant ay pwede na ang printed toppers. 

Cake is made of Chocolate Moist. Icing is Boiled Icing. Cake crumbs naman for soil like design sa top.

This way, maipapakita nila kung gaano kaimportante sa kanila ang celebrant and their hobby, too.
It makes them so special, isn't it?

How to Make Mini Sapin-Sapin

Sapin-Sapin is a Filipino delicacy layered with varieties of flavored made from malagkit and coconut milk. The name came from the tagalog word sapin-sapin or layered by layered. Each layer has a different flavor. It is usually sprinkled or topped with latik.

It is easy to do. Super soft. Super yummy. Perfect for coffee or tea.





Ingredients of Mini Sapin-sapin:

  • 1 1/2 cup of Glutinous rice (Malagkit powder)
  • 1/2 cup All purpose flour
  • 3/4 cup Sugar
  • 1/4 cup Condensed milk
  • 2 cups Coconut milk


Flavorings:
  • Green: Buko pandan flavor
  • Violet: Ube flavor
  • Yellow: Base flavor


How to make Sapin-sapin"
  1. Stir malagkit powder, all-purpose flour and sugar.
  2. Add the condensed milk and coconut.
  3. Strain.
  4. Divide into to 3. 
  5. Put flavor to each.
  6. Prepare 16pcs large puto molder.
  7. Brush the molder with coconut oil.
  8. Scoop 1 tablespoon each layer into the molder.
  9. Steam for 5-6 minutes for each layer.
  10. Let it cool and transfer to the serving plate.
  11. Top with latik


How to make latik:
  • Cook coconut milk in medium fire until it solidifies. The solid part is the latik and the coconut oil is used for greasing kakanin. You can transfer the oil into a small bottle and can be used for future cooking.

How to make Nilupak na Cassava

Nilupak is one of the famous delicacies of Filipino which is made from Cassava. It has only four main ingredients: Cassava, Condensed Milk, Sugar, and Melted Butter.



When I was young, I would always buy a slice of nilupak whenever me and my late grandma went to palengke. It was being sold per piece or per cube.

My cousin just gave me raw cassava or kamoteng kahoy which is one of their crops. About 2 kilos of them. 

Noong una, I thought doing pichi-pichi pero wala akong niyog pa. Nagsearch ako kung ano ano ang madali at less ingredients na pwede kong gawin out of kamoteng kahoy. Surprisingly, nilupak which is one of my favorites, madali lang palang gawin. Madami lang effort.


Ingredients for Nilupak:
  • 1 kg Cassava or Kamoteng kahoy
  • 1/2 cup sugar
  • 3/4 cup Condensed Milk
  • 1/4 cup melted butter or margarine
  • Cheese for toppings

Instruction:

  • Peel off the skin of cassava and wash.
  • Cut into small portion.
  • Steam of 40 minutes in medium fire or until the cassava is soft.
  • Mash the steamed cassava.
                       3 ways:
Through Fork

Through Potato Masher

Through Food Process
Or through Mortal and Pestle.

  • Add the butter, sugar and milk and combine.

  • After it was mixed and combined, put it in buttered pan, pressing down to evenly distribute.
  • Decorate a stripped-like texture using a fork. Like a traditional nilupak look.
  • Put cheese on top and cut.

How to Make Super Fluffy Puto Cake

Hindi madaling gumawa ng puto. I've been through many trials before I got the perfect one. I searched on the internet and on YouTube many on how to make puto pero most of them were palpak.




What made me realized was...Magkamali lang ng kaunti sa recipe, it will never really turn successful.

This is recipe was taken from different Youtube channels. Most of them have the same recipe. Nagadjust lang ako ng little sa isang ingredient. I made it few times, so far, hindi naman napalpak pa.


Here's my puto cake recipe:

Batter:

  • 3/4 cup All Purpose flour or Cake flour
  • 1/4 cup white sugar
  • 3/4 teaspoon Baking Powder
  • 1/2 cup Water


Meringue:

  • 2 Eggs
  • 1/4 cup white sugar

Toppings:

  • Salted Egg
  • Cheese


Instruction:


  1. Mix the flour, baking powder and sugar.
  2. Add the water.
  3. Mix until smooth.
  4. In another bowl, whisk the egg whites and gradually add the sugar. Whisk until stiff peak
  5. Fold the meringue on the batter.
  6. Scoop the mixture to 16pcs puto molder large size with baking paper on top.
  7. Put the toppings.
  8. Steam for 10-12 minutes or until done.


This is great served with coffee or tea.
An addition to your kumikitang kabuhayan.

How to Bake Coconut Butterscotch Bar




This recipe came from my old book.  It is easy to make and ingredients are easily available in the market. This is also a perfect addition to your kumikitang kabuhayan.

Ingredients if Coconut Butterscotch Bar:

  • 1 cup All Purpose flour
  • 3/4 cup light brown sugar
  • 1/4 white sugar
  • 1/2  desiccated coconut
  • 1/2 cup softened butter
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of Baking Powder
  • 1/4 teaspoon of baking soda
  • 1/2 chocolate chips


Coconut Butterscotch Bar:

  1. Preheat the oven 325 degrees Fahrenheit.
  2. In a bowl, combine dry ingredients except for the sugars
  3. Using a mixer in medium speed, cream the butter and sugars for 5 minutes or until pale color.
  4. Add the egg and vanilla extract.
  5. Set the mixer to low speed then gradually add the dry ingredients. 
  6. Next to pour is the desiccated coconut.
  7. Do not overmix.
  8. Turn off the mixer and fold the chocolate chips.
  9. Line the baking pan (8"x8") or 7"x8" (As what I've used)
  10. Pour the batter, spread evenly.
  11. Bake for 25-35 minutes or until golden brown.

It's chewy and you can taste the goodness of the coconut.

Boiled Icing is one of the popular icings for cakes. It is sweet, fluffy and marshmallow-like. This looks easy to do but it's not.



Here's my recipe:



4 eggwhites
2 cups of Granulated sugar
1/2 cup water
1/4 teaspoon Cream of tartar

a new buddy - my laptop!

it's been a while since i haven't published anything in my blog... bakit nga ba? been so busy these past few days. sobrang dami ng work sa shop. atleast now, i hired someone to help me doing such things. medyo nalessen ang mga trabaho ko.

at.. i have new buddy now, my tita from Greece gave me a laptop.. thanks so much to her, napagaang ang trabaho ko.
