Sapin-Sapin is a Filipino delicacy layered with varieties of flavored made from malagkit and coconut milk. The name came from the tagalog word sapin-sapin or layered by layered. Each layer has a different flavor. It is usually sprinkled or topped with latik.
It is easy to do. Super soft. Super yummy. Perfect for coffee or tea.
Ingredients of Mini Sapin-sapin:
- 1 1/2 cup of Glutinous rice (Malagkit powder)
- 1/2 cup All purpose flour
- 3/4 cup Sugar
- 1/4 cup Condensed milk
- 2 cups Coconut milk
Flavorings:
- Green: Buko pandan flavor
- Violet: Ube flavor
- Yellow: Base flavor
How to make Sapin-sapin"
- Stir malagkit powder, all-purpose flour and sugar.
- Add the condensed milk and coconut.
- Strain.
- Divide into to 3.
- Put flavor to each.
- Prepare 16pcs large puto molder.
- Brush the molder with coconut oil.
- Scoop 1 tablespoon each layer into the molder.
- Steam for 5-6 minutes for each layer.
- Let it cool and transfer to the serving plate.
- Top with latik
How to make latik:
- Cook coconut milk in medium fire until it solidifies. The solid part is the latik and the coconut oil is used for greasing kakanin. You can transfer the oil into a small bottle and can be used for future cooking.
