This recipe came from my old book. It is easy to make and ingredients are easily available in the market. This is also a perfect addition to your kumikitang kabuhayan.
Ingredients if Coconut Butterscotch Bar:
- 1 cup All Purpose flour
- 3/4 cup light brown sugar
- 1/4 white sugar
- 1/2 desiccated coconut
- 1/2 cup softened butter
- 1 egg
- 1 teaspoon vanilla extract
- 1/4 teaspoon of salt
- 1/4 teaspoon of Baking Powder
- 1/4 teaspoon of baking soda
- 1/2 chocolate chips
Coconut Butterscotch Bar:
- Preheat the oven 325 degrees Fahrenheit.
- In a bowl, combine dry ingredients except for the sugars
- Using a mixer in medium speed, cream the butter and sugars for 5 minutes or until pale color.
- Add the egg and vanilla extract.
- Set the mixer to low speed then gradually add the dry ingredients.
- Next to pour is the desiccated coconut.
- Do not overmix.
- Turn off the mixer and fold the chocolate chips.
- Line the baking pan (8"x8") or 7"x8" (As what I've used)
- Pour the batter, spread evenly.
- Bake for 25-35 minutes or until golden brown.
It's chewy and you can taste the goodness of the coconut.
